  4. Responsibility. Who does each step.
  5. Exceptions. What to do when something goes wrong.

Skip the exceptions section and your SOP will only work on a good day. Most days aren't good days.

The mistake most first-time SOPs make

They're too vague. "Clean the station between clients" is not a procedure, it's a restatement of the goal. A real SOP says what "clean" means: which surfaces, which products, how long it should take, and what to check before moving on.
